Cooking up some expert advice on alternative farming

In its second year as a major supporter of the Seymour Alternative Farming Expo (SAFE), NMIT will expand its program at this year’s event to include The Butcher’s Shop.

The NMIT Butcher’s Shop will feature a series of demonstrations by NMIT instructors in meat processing, food preparation and cookery. This will complement NMIT’s Ag Zone, a precinct successfully launched last year, offering visitors a “one-stop shop” for the latest in agricultural and related products and services.

At the Butcher’s Shop, learn how to identify different cuts of meat and watch our chefs use them to create delicious recipes. Experts like NMIT culinary coordinator, Andrew Shepherd will use local produce to show visitors how to prepare and cook different cuts of pork, venison, goat and lamb to create fantastic flavours.

There will also be sausage making demonstrations and lessons on food preparation and handling. Each day NMIT will host a fun cook-off segment featuring chefs from local restaurants preparing dishes which will be judged by the audience.

“At The Butcher’s Shop, expo visitors can learn how to use every piece of the carcass. Anyone interested in the skills involved in breaking down a carcass and the creative preparation, cooking and presentation of meat dishes will benefit from these demonstration sessions,” says Associate Director of NMIT’s Faculty of Earth Sciences, Wayne Pappin.

NMIT’s involvement with the Butcher’s Shop demonstration program reflects the Institute’s approach to the vertical integration of its own beef and lamb production. Beef and lamb are produced at NMIT’s 500 hectare broadacre farm at Yan Yean, processed at its state-of-the-art meat processing and training facility at Epping, then prepared for diners at the NMIT restaurant, St Georges, at Preston. The Institute runs a wide range of meat processing courses both in the workplace and at its Epping Campus.

The program at the NMIT Butcher’s Shop will run from 10am to 4pm during each day of the Seymour Alternative Farming Expo. The full program can be downloaded by visiting the NMIT website at www.nmit.edu.au.
